Quick Chicken Peanut Mole with Cilantro Rice

This is a recipe that popped up as an ad for Jif peanut butter on a site I was cruising.   It really is easy, fast, and has great flavors all throughout.  A definite do over. 

Chicken Peanut Mole

 No-stick cooking spray
2 lbs skinless, boneless chicken breasts and thighs, cut into 1/2 inch strips
1 chopped onion
1 tsp garlic
1 can (14 oz) chicken broth
1 can (14.5 oz) can diced tomatoes and green chiles
1-3 tsp chili powder, or to taste
1/4 cup creamy peanut butter
1 Tbsp baking cocoa
1/4 tsp ground cinnamon
2 Tbsp chopped fresh cilantro, for garnish (optional)

Citrus Cilantro Rice

4 cups water
4 cups instant rice
1 tsp ground cumin
1 tsp salt
1/2 cup orange marmalade, or sugar free marmalade
2 Tbsp. chopped fresh cilantro or parsley

Chicken Peanut Mole

1. Spray a large skillet with no-stick cooking spray. Heat over medium-high heat. Add chicken. Cook chicken until golden brown on all sides and cooked through. Remove chicken from skillet.

2. Spray skillet again with no-stick cooking spray. Add onion. Cook until softened. Add garlic. Cook an additional minute. Stir broth, tomatoes, chili powder, peanut butter, cocoa and cinnamon. Bring to a boil. Reduce heat to a simmer. Note: Sauce may be pureed in blender until smooth if desired.

3. Place chicken in sauce, combining gently. Cook, uncovered, 5 minutes to combine flavors. Serve over Cilantro Rice. Sprinkle with additional chopped cilantro, if desired.

Cilantro Rice

1. Bring water to a boil in a 3-quart saucepan. Add rice, cumin and salt. Let stand 5 min. or until water is absorbed. Add marmalade and cilantro. Combine ingredients with a fork.
