Salmon Ball

parsley_cheese_ball.jpgA perfect dish for any party. Easy to make with loads of flavor.  My mother in law makes this and it is one of the first things to go.

Salmon Ball

2 cups fresh salmon or 1 (15 ounce) can of salmon
1 Tbsp. Lemon Juice
2 tsp grated onion
1 tsp horseradish
1/4 tsp salt
1/4 tsp liquid smoke
1/2 cup pecans
3 Tbsp. snipped parsley

Mix all ingredients except the pecans and parsley together to form a ball. Chill until ready to handle and form a ball. At this point, taste to make sure the smoke flavor is to your liking. (The longer it site, the better it gets) Mix the chopped pecans and parsley together. Roll Salmon Ball to coat and refrigerate. Serve with your choice of crackers or fresh vegetables.
