I love these cookies. They always turn out. I have used the basic part of the dough recipe and made just plain chocolate chip cookies, I’ve substituted cran raisins for the cherries, white chocolate for dark chocolate you name it. It is a great go to dough recipe if nothing else. I got it from Paula Dean’s website on Food network.
Make sure you make these using a well rounded tablespoon. Don’t be shy. Also, try it her way first, if your like me, you will change it up also. I liked the original, specially for a holiday cookie, WHICH, by the way is coming up soon….. but I can’t leave anything alone after trying it the first time as the recipe says, and making my changes. So here is a great recipe for your Christmas cookie box.
White Chocolate Cherry Chunkies
1 Stick butter, softened
1 cup packed brown sugar
1 cup granulated sugar
2 large eggs
1 tsp. vanilla extract
3 cups all purpose flour
1 tsp baking soda
1/2 tsp. salt
2 Tbsp. milk
1 cup chopped macadamia nuts
1/2 cup candied cherries
1 1/2 cups white chocolate chunks
Preheat oven to 375 degrees F.
Iin a medium bowl, cream butter and sugars until light and fluffy. Add eggs and vanilla and beeat until combined. Set aside.
Sift together flour, soda and salt. Add milk to the butter mix and add the flour mixture. Mix until combined. Batter will be stiff.
In another bowl, combine nuts, cherries and white chocolate. Then add to batter, stirring only to blend. Drop by heaping tablespoons onto a greased cookie sheet, 2 inches apart. Bake for approx. 11 to 13 minutes. Cool on a wire rack.
