Lemony Chicken Salad With Red Grapes

chicken-salad.jpgI saw this recipe in my inbox this morning from Relish Magazine and had to make it.  I had leftover rotisserie chicken, and just purchased some green grapes which I figured would do the trick.  Now just to put it all together. It was very simple, the dressing had a nice tang with the red wine vinegar.  I would likely next time leave out the basil. I didn’t like the flavor combined with the sweet.  I also used lowfat yogurt and low fat mayonnaise to reduce the fat calories, previously 10 grams of fat down to 3.65. Quite the savings.

Chicken:
2-3 chicken breasts, approx. 1 lb.
juice from one lemon
fresh thyme (optional)
salt and pepper
garlic 1 clove minced

Mix chicken, lemon juice and thyme together and refrigerate for 30 min. Remove from refrigerator; season with salt and pepper. Grill chicken 5-8 minutes per side or till cooked through. Cool and cut into 1/2 inch cubes

Dressing
3/4 cup low fat yogurt
3 Tbsp. low fat Mayonnaise
1/4 cup celery diced
1/4 cup green apple diced
2 Tbsp. red wine vinegar
1 Tbsp. chopped parsley
1 Tbsp. Basil
1/2 cup seedless grapes halved

Combine all ingredients and add chicken, refrigerate for 10 min.  Cut pitas in half and fill with chicken salad mix. Enjoy!
