For those of you who are a member of our family, you know exactly what lemon goop is. For those of you who aren’t? Well it is a “go to” dessert filling that my Grandma Benson would use when she was asked last minute for a dessert for a function, family showing up unexpectedly, or the pure simplicity of it. She filled tarts, topped pound cakes, cookies, you name it. Grandmas house was never with out desserts. So in honor of her birthday, April 13th, I am posting her recipe for Lemon Goop recipe.
1 can lemon pie filling
1 cup crushed pineapple
1 tub Cool Whip
*My mother adds zested lemon and 1 tbsp. of lemon juice to her recipe.
I would imagine that if you were diet conscious, you could use fat free Cool Whip, and a lighter version of the pie filling or make your own.
