Wrap it up!

Spinach, mushrooms, onions and black beans rolled up in a whole wheat tortilla.  With a little added creativity this wrap is quite good.  I added goat cheese for a bit of tang.  I think it is a keeper for a quick and healthy lunch.

Spinach mushroom wraps
4 whole wheat wraps
2 cups sliced mushrooms
1 medium onion sliced thin
1 can of black beans
4 cups spinach leaves
1/2 cup goat cheese (to be divided between wraps)
salt and pepper to taste
red pepper flakes (optional for heat added during saute)

Heat tortillas in microwave or oven according to package directions. Spray non stick skillet with cooking spray; heat over medium heat. Cook mushrooms and onions in skillet for about 4 min, and onions are crisp. Stir in beans; heat through. Stir in spinach, remove from heat.

Divide mixture between four tortillas and top with a sprinkle of goat cheese. Cheddar cheese could be used in place if you are not fond of goat cheese. Fold bottom end in and roll up like a burrito.
