That’s about as far as I have gotten on the Tofu thing. Just staring at it. Because I have to have 2-3 meatless meals a week, but needed to bring in protein, I have decided to take a stab at Tofu. Will lettcha know how THAT goes. Oh and the USE by date is March 19th. So I have a bit of time to figure out what to do with it, besides stare at it.
Week one update: Weighed in after one week of Mediterranean style eating (notice diet is not in that sentence) and I have lost 7 1/2 lbs. WOW! I’m amazed. I have never had a weight loss that dramatic in the first week, even on the Carb diet.
