Cheesecake cupcakes

This one is for Paige. EASY!

1 (455) lb cream cheese softened
2 large eggs1 tsp vanilla extract
1/2 cup granulated sugar
12 vanilla wafer cookies
12 mandarin orange slices

Place cream cheese, sugar, eggs and vanilla extract into a mixing bowl and beat on medium-low speed until creamy.

Pour the cheesecake batter into muffin lined tin, fill about 3/4 full. You should get 12 cupcakes with possibly a little left over. Top each cupcake with a mandarin orange or fruit of your choice.

Bake the cheesecake cupcakes for about 15 min. in a preheated 350 degree oven. As soon as they are set, remove the muufin pan and let cool for a couple of minutes on a wire rack. After pan has cooled a bit, pull out each of the cheesecakes and let them completely cool before refridgerating.

These should last a couple of days in the fridgerator, IF they last that long and are great to take to a picnic gathering.
